      Title: Neil's Harbour Bread Variations

  RAISIN BREAD
  
  Add a pound or so of raisins to the bread dough when you are mixing
  in the flour.  If you want only one or two loaves, you can add the
  raisins after the dough has risen and you've divided it; knead in a
  cupful of raisins per loaf, then put your loaf in the greased pan to
  rise.
  
  FRUIT LOAF
  
  Add 1 or 2 cups of mixed candied fruit, chopped fine, 1 or 2 cups of
  raisins, 1 cup of nuts to the basic dough; or knead 1/3 the amount
  into the individual loaves.  Glaze the top
  
  CHEESE BREAD
  
  Mix 2 or 3 cupbuls of shredded, sharp cheddar cheese or chunks of
  cheese into the basic bread dough or knead 1 cupful into each loaf.
  
  ONION BREAD
  
  Mix 2 or 3 cupfuls of minced onion, or slightly sauteed sliced
  onions, or 1 or 2 packages of onion soup mix into the basic dough or
  knead 1/3 of the amounts into each loaf.  (If yyou use the soup mix
  omit the salt in the recipe)
  
  HERB BREAD
  
  To the basic dough ad 1 tsp each of savory and marjoram, 1/2 tsp each
  of thyme or sage, basil, oregano, dill seed, celery seed and 1 tbsp
  of fres cut up parsley.  Or your might like to try one or two
  different herbs in each of the 6 buns o'bread.
  
  SPICE BREAD
  
  Add 1 tsp each of cinnamon and cloves and 1/2 tsp nutmeg or ginger
  when you mix in your flour.
  
  CINNAMON ROLL
  
  Roll the dough for one loaf an inch thick and about 6 by 9 inches.
  Spread melted butter over the dough; then sprinkle it generously with
  white or brown sugar and cinnamon - raisins and choppped nuts too if
  you like. Roll it as you would a jelly roll and put it into a well
  greased bread pan to rise.  Bake at 400F for about 30 minutes.
  
  CHEESE ROLL
  
  Roll the dough for 1 loaf an inch thick, about 6 by 9, dot it with
  chunks of cheddar or spread 1 cup of grated cheese over it.  You
  might like to sprinkle on it celery seed or any pet flavor you may
  have (parsley is nice too)  Roll it up like a jelly roll and fit it
  into a well greased loaf pan to rise.  Bake at 400 F for 1/2 an hour.
  
  ONION ROLL
  
  Do the same as you did with the Cheese Roll, using 1 cup of sauteed,
  sliced onions or a combination of onions and cheese, or onions
  sprinkled with selery salt or sage.
  
  BUTTERMILK BREAD
  
  Substitute buttermilk or sour milk for the 2 cups of water in the
  Neil's Harbour Bread recipe.
